this can have several reasons (e.g. new Plesk version etc.). We have been using Plesk for a long time and running several Nextcloud instances with our guide.

I know that we no longer update our Plesk tutorials, because we no longer have Plesk in productive use.

I can only say that our Nginx vhost as specified in the tutorial works exactly the same with Nextcloud.
